Three Cabbage Salad with Chicken

This is one of my favorite things to bring for lunch at work. It's super easy if you just cook some chicken the night before.

Dressing:

1-2 T. toasted sesame oil
1-2 T. low sodium soy sauce
juice of 1 big lime
1/2 t. sugar
2-3 thin slices of fresh ginger root
red pepper flakes

Combine all dressing ingredients in a small plastic container and shake well before serving. Optional: remove ginger slices before serving.




Salad:

1 cup of shredded green cabbage
1 cup of shredded red cabbage
1 cup of shredded napa cabbage
1/2 cup of grated carrots
2-4 radishes, sliced thin
1 chopped, poached or baked chicken breast


Combine all salad ingredients in a plastic container, with enough room to toss all the ingredients together.
